Joes' Cake

My dad and brother are OBSESSED with this cake. Anytime my little brother wants to celebrate something this cake is part of it. It is a recipe from my Grandma and has been in my family for some time...so I hope ya'll enjoy it!

Joe's Cake
1/2 Cup Cocoa
1 1/2 Tsps. Soda
1/2 Cup boiling water

Put the above ingredients in a bowl and stir until they are well blended. Set aside to add after last addition of flour. Meanwhile---

Beat until well blended:
1 Cup shortening
1 3/4 Cups Sugar
1/4 tsp. Salt

Add: 2 eggs beating well after each addition...
Add: 1 3/4 cups think buttermilk
Add: 2 1/3 cups all purpose flour
Add: 2 tsp. vanilla

Beat all together until smooooooth. If the batter is too thick add a little more buttermilk. Lastly add the Cocoa mixture and blend together. Bake at 350 for 45-50 minutes. 

Frosting:

Blend together:
1 Pkg powdered sugar
2 Tlbsp. Cocoa
4 Tlbsp. Butter
2 Tsp. Vanilla
Add enough milk to blend ingredients so the frosting becomes a good consistancy to spread on cake.

Side note: My dad is convinced that the cake tastes better after you leave it out over night. I don't know why, but he is SURE of it.
