Chocolate Nutella Awesomeness: Video







Happy Wednesday everyone! We are half way through the week yahoo! So today I have a fun post for you, it's another video! Wahoooo! I said on Monday I was going to have Princess themed posts as a countdown for the release of Cinderella... and this one I decided to do because in Tangled Rapunzel is an excellent baker. Also, in Princess and the Frog Tiana is an excellent cook and wants to own her own restaurant. (I don't want to own my own restaurant... but how awesome would it be to be
on a show where you got to travel around and eat sweets?!) Tiana is a hard-worker and knows in order to get to where she needs to be she needs to make things happen for herself, and that's kind of what I am doing with these videos. Anyway, I hope you enjoy the video! It truly is a DELICIOUS treat! I looooove it! It has everything you would want in a dessert... Nutella, chocolate chips, raspberries, whipped cream, puff pastry... the whole sh-bang! I hope you like it!

Love Potion #9 Mocktail (Video!!)



Hello everyone!  If you follow me on Facebook or Instagram you will have seen that I posted my first video! YAYYY! I have been saying for months that am I going to do it AND I finally did! And let me tell ya, it's a little nerve wracking posting it. There are so many other great bloggers and YouTube channels out there... and to tell you the truth all of those successes were(is) incredibly intimidating to me. I kept thinking to myself, "Why would you do this? What makes you different? You don't have nearly as many followers as these other people... so will this even be worth it?" I know, those are some pretty drab thoughts but they're what went through my head. But I decided enough was enough, I am the only "me" and that is what will make my videos different(for now). It's time for me to stop sitting around talking about my dream job... it's time to take even BIGGER steps to get there; and I feel like posting this first video is a gigantic step.

Now that my little speech is over I hope you enjoy the video! It's a how-to on how to make the perfect Valentine's Day mocktail! It truly is so yummy... and I am not just saying that because I made it up, it really is good. (There are somethings that I have made that I would NEVER post because they would offend your taste buds.) ANYWAYS, I hope you enjoy the video and stay tuned for more.  Happy Valentine's Week everybody! I hope it is full of love, chocolate and treats. Whether you are celebrating with someone special, ooooor on your own it's good time to remember to be kind to those around you. AND it's especially a good time to remember to love yo-self! Cheesy but I think we all
need to remember to be kind to ourselves...

Moving on! One of my favorite things about Valentine's day (besides chocolate) is sugar cookies! More specifically, my mother's sugar cookies. I swear to you, they are the best sugar cookies of all time. I consider myself a sugar cookie tasting expert, I try them pretty much every where I go, and these are the best of the best. Give the recipe a try and tell me what you think!

My Mama's Sugar Cookies

Ingredients: 
*4 1/2 cups of flour
*1 tsp baking powder
*1 tsp baking soda
*3/4 tsp. salt
*1/2 tsp nutmeg (The special ingredient!!!)
*1/2 tsp almond flavoring
*1 cup butter
*1 1/2 cup sugar
*2 tsp. vanilla
*2 eggs
*3/4 cup nonfat sour cream or plain nonfat yogurt

Cream butter and sugar. Beat in eggs, vanilla, almond flavoring and nutmeg. Then sift dry ingredients, then add the dry ingredients alternately with sour cream until smooth. Chill for at least 1 hour. Roll and cut into cute hearts (a must). Bake at 375 for about 9-10 minutes, until the bottom is a nice golden brown.

 Hi guys! I tell you what... this time of year I have the hardest time not stuffing my face with every chocolate heart I see. I like chocolate normally; but when it's EVERYWHERE I go and it's wrapped up so nice and cute and the chocolate itself looks so pretty it is hard to resist. And I although I'll eat pretty much any type of chocolate I do have my favorites. Here are some of my favorite chocolate treats here in Utah...I could probably do 3 more posts on my favorites; but these will do for now.

S'more Chocolates: Mrs. Cavanaugh's in Bountiful

Oh. My. Lands. These chocolates are my favorite! My mom gets them for me twice a year, Valentine's Day and Christmas. They taste like the perfect s'more! The marshmallow to chocolate to graham cracker ratio is perfect. Plus the chocolate just melts in your mouth... go try them ASAP!


Chocolate from The British Pantry 

I looooove European chocolate. I don't care what anyone says, it tastes different than American chocolate and it is so much better! (Don't get me wrong, I am proud to be American I just wish some of our chocolate was better.) Anyway, go to the British Pantry (There is one in Sandy and one in Salt Lake) and get yourself an Aero Bar, a Double Decker, Minstrels and a good old fashioned Kit Kat. You won't be dissapointed.

Chocolate Covered Strawberries from V Chocolates

If you are from around these here parts you probably have tried some sort of treat from V Chocolates You really can't go wrong with anything from this place... but I have two favorites, the chocolate covered strawberries and the milk chocolate pretzel caramels. The chocolate is so smooth and yummy... I am drooling just thinking about it. T.M.I? Sorry.

Hot Chocolate from Hatch Family Chocolates

So this next chocolate treat isn't straight chocolate... but it's so good I had to put it on my list. The Hot Chocolate from Hatch Family Chocolates is so rich, creamy and delicious it can change lifes. Obviously I am kidding but it is SUPER delicious.

Chocolate Cake from Porcupine Grill  

The bummer about the Chocolate Cake at the Porcupine Grill is that it's a Special... so you might have to call ahead and ask if they have it before you drive up. Or call and see if they have a schedule for when they make it. It is good man, it is just plain good. It has three layers of delicious cake and scrumptious frosting. I usually don't love chocolate cake (I know that's weird for chocolate lover but it's the truth) but this one is an exception.

Hey guys! Happy weekeeeeend! I hope your weekend is wonderful, fun and relaxing all at the same time.

Moving on, let's talk Super Bowl Sunday! More specifically lets talk about my favorite food on Super Bowl Sunday. Every year my mom makes this delllllicious popcorn. I know what your thinking... what is so special about popcorn? Well let me tell you, when it's mixed with peanuts, marshmallows and covered with white chocolate and then drizzled with dark chocolate it becomes pretty darn special. BUT this year my mom and I decided to have a little fun with the colors of the popcorn. Since it's the Patriots vs. Seahawks we decided instead of drizzling dark chocolate (you can still do that if you want) we'd cover the popcorn in each teams colors! It made the popcorn a little more festive and, obviously, more colorful. Another plus? This is the easiest recipe ever! Try it out and let me know what you think!

White Chocolate Popcorn:

Ingredients:
-2 bags of popcorn
-1 bag of white chocolate
-1 cup of peanuts (You can add more if you want.)
-1 cup of marshmallows (You can add more of these if you want as well!)
-1 Bag of red, blue and green chocolate (You can find the colored chips at a craft store.)

Making the Popcorn:
-Pop the popcorn
-Place it in a big bowl
-Mix peanuts and marshmallows in with the popcorn
-Melt the white chocolate (We put the chocolate in the microwave in 30 second increments, stirring every time the beeper went off until the chocolate was nice and smooth.)
-Mix the white chocolate in with the popcorn
-Place the popcorn on a baking sheet so it can dry
-Melt the red, blue and green chocolate the same way you did the white
-When its nice and smooth take a spoon and drizzle it over the popcorn
-Let the popcorn sit so the chocolate hardens theeeen eat up!

Contributor Post: For The Love of Protein


You guys, we have all made it mid-week! I just want to thank all of you for being so sweet about Monday's Post . I received some sweet comments and messages and I appreciate it so very much. Moving on to today's post, my Fitness Contributor Mal is back again! Yay! So, today she has an awesome recipe AND a great workout, here she is!


For the Love of Protein



How’s it going everyone?  I would have to say it is going pretty well here in Ohio.  My husband and I have finally settled in and things are starting to feel a little more normal.  My husband has been in school for almost a month now and I finally start working this week! YAY!!! It has been nice to have some time off… but when you are used to being busy all day every day, having nothing to do gets old really fast.  I am currently teaching dance at a couple studios and am finishing up my training to be a Fitness Coach at Gold’s Gym.  I’m also getting my Body Pump certification in a couple weeks!  I’m super excited. 

Anyway, lets get to the point.  All this moving and trying to get settled in has left me feeling kind of out of whack.  I still worked out every day, but I kind of got in a few bad habits with my diet… I kind of like ice cream way too much… So this past week I really kicked it up a notch and cleaned up my diet. 

For breakfast I try and get a good amount of protein so I can stay full longer.  A couple years ago I used to have a protein shake/drink every morning for breakfast.  It kept me full and I happened to be my leanest when I was doing it.  Then I started getting sick of my protein powder… I tried other ones but none of them seemed to work for me.  Too grainy, too think, too chalky, etc… Gradually I just gave up on protein and started going back to having cereal for breakfast.  Now there are some decent cereals out there, but for the most part, cereals are full of empty carbs.  As much as I LOVE cereal, I know it’s not the best thing for me and I never really feel that great after eating it. 

I had heard a lot of good things about Cellucor’s Cinnamon Swirl protein powder and it has always intrigued me.  Well, I was at Costco last week and guess what was there?  Yep, that brand and flavor.  I decided to give it a go…. You guys… It is so good.  I am a big cinnamon fan in the first place, so this just hit the spot.  You NEED this protein powder.  Here is the breakfast I have been having this past week.

I call it, Cookie Dough Oats.

All you need is:
A little less than ½ cup of milk (skim, almond, whatever)
1 scoop of Cellucor Cinnamon Swirl Protein
½ cup of oats
1 tablespoon of peanut butter (I use Jiff naturals.  Yes, I know it isn’t the “best” peanut butter but it tastes FREAKIN good so I don’t care.)

Warm up your milk in the microwave.  1-2 mins.  Watch it so it doesn’t bubble up and explode. (Yeah I did that…)
Stir in a scoop of protein
Pour the milk/protein mixture into your bowl of oats and stir it all up. (I like the raw texture of the oats…that’s why I don’t put them in the microwave.)
Warm up the PB in the microwave for about 30 seconds
Pour melted PB in the bowl of oats
Mix it all in.

HEAVEN in your mouth.  Seriously.  It tastes like something you shouldn’t be having for breakfast.  But you can.  Look how awesome these nutrition facts are:

On a side note, I was feeling like I needed a little booty work this week so I made up this work out.  Give it a try… It made my glutes SORE!

BUNS OF STEELE

4 rounds:
20 walking lunges with 60# barbell
20 jump squats

4 rounds:
15 weighted hip thrusts 25# Kettle bell (Lay your upper back on a bench and sit the kettlebell on your lower abs.  Lower your butt down to the floor and press it up as high as you can go and SQUEEZE!)
15 weighted step ups 25# Kettle bell, Right and Left (Put left foot on the platform, holding the kettle bell in your right hand.  Straighten your left leg as your right foot comes up to meet your left, and go back down.  Do all 15 reps on one leg before moving on to the other. Don’t forget to squeeze that butt!)

4 rounds: 
10 straight leg dead lifts with kettle bell
20 straight leg kick backs Right and Left (Get on your hands and knees on top of a bench or platform.  Straighten your right leg and touch your toe to the floor.  Lift it up and squeeze your butt.  20 of those, then repeat on other leg.)

Don’t forget your protein when you finish! :)

Contributor Post: Road Trips and Snacks


Happy Monday everyone! Can you believe we are already this far into July? It's amazing how fast the summer goes! Anyway, Mal is here to today for a post that is perfect for this time of year. Many of you will take road trips this summer and she is here to talk about snackin' on those trips!

I am finally back home from my trip to beautiful Canada! Sunday was a long day for me because my husband and I had to drive 14 hours straight to get home. The good thing was I had a looong time to do nothing but think about what I wanted to write in my post for this week.
 
Since I have been taking a lot of road trips lately and am about to take the longest road trip of my life in a week and a half (I'm moving to Ohio...eeek!), there has been one subject that has been on my mind a lot: road trip snacking. Growing up my family went on lots of road trips and I have to admit my favorite part was digging into the HUGE bag of snacks my mom would bring...Licorice. Popcorn. Muddy Buddies. Sun Chips. Cinnamon bears. Cookies. Hot Tamales. Smarties. You name it, my mom had it. Now don't get me wrong, I believe all these things are fine in moderation. (Key word MODERATION). But please tell me...who honestly snacks in moderation during road trips?? Definitely not me. If I have a bag of candy in front of me and I have nothing but prairies to look at for the next four hours, that whole bag of candy is going straight to my belly. Totally unintentional of course, but sometimes the bag-to-mouth hand motion goes into autopilot and you've done the damage before you even realize it. You've eaten your days worth of calories and all you've been doing is sitting on your butt...

Now here is the part where I give you a tip that you might not like... Don't bring snacks in the car for your road trips. I promise you can do it! Here is the first key to success: have a nice, big, healthy breakfast. My husband and I like to get on the road early, so we will wake up, drive a few hours and then stop for breakfast. That should tide you over until your next pit stop. Then you can grab a quick, healthy lunch and be on your way! Or even better, pack a lunch. Anyway, hopefully you get the gist!

Now I know there are some of you out there who just ABSOLUTELY have to snack (aka my mother). My tip for you would be to only bring healthy snacks that won't do damage. For example: carrots, apple slices, celery, grapes, pre-portioned nuts, blueberries, etc...

Last but not least, here is my favorite snack recipe that I make all the time at home that you can take on your next road trip if you really need to ;)

 
PB AND HONEY BALLS

Mix together the following:
1 cup of oats
1/2 cup natural peanut butter
1/3 cup organic honey or agave
1/2 cup ground flax seed
1/2 cup dried cranberries (no sugar added is your best option)
1 tbsp chia seeds
1 tsp vanilla extract
Form into 1 to 2 inch balls and refrigerate!

Chocolate Chip and Hazelnut Bundt Cake

I realize it's a bit silly of me to post a high calorie dessert today after we talked about being healthy and working out in yesterdays post...BUT my mother made it yesterday and I thought to myself, "I have to share this! You know... everything in moderation!" Plus, I saw this quote on Pinterest the other day. It said, "You are not a flamingo, it's ok if your thighs touch. Calm down and have a cupcake." I'm not saying stuff your face everyday, I am saying (and I think Mal, My Fitness Contributor would agree) it's ok to indulge every once in awhile. I know I have to... a life with no sugar is sad...

Anyway, this is one of my FAVORITE cakes my mother makes. It is a family favorite, so very delicious. She created it one year for my birthday and we have been eating it ever since! (PS This cake below doesn't have nuts IN the cake. My brother didn't went them for some reason...)




 

Chocolate Chip and Hazelnut Bundt Cake
1 Yellow Cake Mix
1 (3 oz.) Instant Chocolate Pudding
1 cup (8 oz.) Sour Cream
3/4 Cup of Oil
3/4 Cup of Water
4 Eggs
1 Bag (12 oz.) Dark Chocolate Chips
1 Cup Chopped Hazelnuts 
Nutella

Directions
In a blender mix everything but the chocolate chips and nuts. Mix until the batter is smooth. After that, stir in the chocolate and nuts. Easy peasey. Pour into bundt pan and bake at 350 for 50-55 minutes. Once the cake is done, heat and drizzle the Nutella on top as the frosting. Chop up some hazelnuts to make it look pretty and you are good to go!

Utah Finds: My Favorite Mexican Resturants

The weekend is here! And I don't know about you, but one of my favorite things to do on the weekend is go out to eat. That says the weekend to me... heading out with family/friends and eating good food and laughing our heads off. Anyway, whenever it's up to me I usually go for Mexican food. I just love it! Here are some of my top picks in here in good old Utah!

This. Place. Is. The. BEST! Oh my lands above, I have told lots of people to go here and every time someone goes they have nothing but great things to say. Their salsa is divine and so is their queso. I usually order their chicken chimichanga, but the mango salad is a delicious as well! I crave this place constantly.

I like this place mostly because of the salsa bar. YES a salsa bar. You go up and get your chips and as much salsa as you want. There are so many choices! I like the mango salsa and the green-not-hot one. Haha, I wish I knew what it was called... but you'll figure it out if you go!

If you are from Utah you knew this choice was coming. I love mole and that is what they are famous for. My favorite is the Mole Publano.

So bloggers have been instagraming this place like crazy. I went there with my mom and it's actually pretty good! If you like guac you will love it! They make it at your table, dinner and a show! (Lame joke). At the end of dinner they bring you churros. free dessert? Sounds good. PLUS their queso is yummy too... if a place has a good cheese dip I am a fan. Alamexo closes in between lunch and dinner so make sure to check the times before you visit!

Easy Strawberry "Shortcake"

Hello readers! I hope this week is treating you well so far. Today I have a food recipe for you, well my mom does, and it is SOOOOO easy. People love yummy food that's easy to make right?

Every Sunday my family has dinner with my cousins. There is usually a buuuuunch of us there so easy food is the way to go. This past Sunday my dad asked for Strawberry Shortcake, it being Father's Day and all it was his choice. So my mom made it but with a little bit of a twist.

For the cake she went to Costco and bought those huge muffins, I know it seems weird but it was really good. We could choose between poppy-seed and chocolate. Then she cut them into thirds, so it looked really pretty too! To make it even better she heated up Nutella and spread it between the layers so yummy! (The Nutella goes better with the chocolate muffins just so you know.)

To make the strawberries "saucy" she added granulated sugar. To step it up a notch you can add vanilla and lemon- flavor to your taste. 

So there you go! Easy peasey strawberry "shortcake."

Pinterest Triumphs

So how many of us pin food on Pinterest because it looks amazing, then we try it out and it is anything but? It has happened to me a few times... BUT there are some recipes that I have been impressed with and have turned out splendidly. Here are my favs:

Chimichanga 
I didn't follow the exact recipe for the filling of this dish. I just loved the idea of making Chimichangas at home without using a deep fryer. They turned out SO delicious! Plus since it is not deep fried it is slightly healthier!

Give me s'more of this dish! Haha, sorry I had to. This dessert is SO yummy. We made it for a family dinner a little while back and it was a huge hit! We sat around and dipped (but not double dipped) and chatted. It was great fun. I used a bigger skillet then the recipe says, this being so I used more mallows and chocolate chips.

Crockpot Salsa Chicken
I LOVE THIS ONE! Yes, all caps. Every single time I do it it taste delicious. Plus, who doesn't love a crockpot dish? Through it all in in the morning and it's ready when you get home from work. To add a little something, I serve it with rice and tortillas. I don't usually like leftovers, but this dish makes great ones!

I feel sightly silly posting this one... everyone has had these- but for those of you who haven't here it is! It is the easiest treat to make in the world, and is a huge crowd pleaser. Plus it is easy to make a ton of them.

Satisfying a Sweet Tooth! RubySnap


I loooove sweets. There is something about them that just make ya happy. To be honest I try to only eat them on the weekends...but every once in awhile I just need a mid-week pick me up. One of my favorite places to go to satisfy my sweet tooth is RubySnap.

RubySnap is a cookie shop in Downtown Salt Lake and I adore it. Each cookie is name after a woman... like Audrey, Betty Darby etc. And each one has a picture to go with it, an old school fifties picture that makes the shop have kind of a vintage vibe.

The cookies are thick and scrumptious and every bite is full of flavor. My favorite is "Suzie." The cookies is made with vanilla dough, then tart cherries and milk chocolate chips are added. It is drizzled with milk chocolate and a little bit of pink sparkle.

The fan favorite at RubySnap is "Penelope." A peanut butter cooked dipped in chocolate. Simple but oh so delicious!

Making Monday Marvelous: Part 3


Happy Monday ya'll! It is time to tackle another week! Are you ready for it? Of course you are. Anyway, I am kind of digging these here Monday posts because, more than anything, they help me get through Monday. It seems easier when there is something fun to do/look forward to. Now, I am going to share a workout with you. I am sure many of you are thinking- that is NOT fun and I do not look forward to that. BUT I do this on Monday's because Sunday's are usually when I eat the most so the next day I feel like I got to work it off. Also Mocktails are just FUN, after you've survived a Monday its fun to make a fun drink and relax a little. You earned it!

A Run and Bootcamp
I got this workout from my cousin. 
I have no idea where she got it from and I do NOT claim it as my own.
All I know is she posted it once upon a time and I loved it so I am going to share with you.

Run 3 miles.
After that complete 40 reps, 30, then 20 of the following.
After ever two exercises complete 15 burpees (1st round), 10 burpees (2nd round) and then 5.

D-bel lunge with shoulder press
Push-ups with superman at the bottom of your push-up
BURPEES

Alternating Bicep Curls
Skull Crushers
BURPEES

Deadlifts
Mountain Climbers
BURPEES

Bicycles
Russian Twists
BURPEES

Mocktail: Citrus Sun
 I LOVE this one. It tastes so refreshing and has a slight tang- BUT is still sweet at the same time.
My mother and I made this for a big group so.... here is the recipe if you want to share!
Here's what ya do:
Cut up an orange, grapefruit, lime, and add maraschino cherries.
Then add cranberry juice, pink grapefruit juice and gingerale.
 Drink up!

Make Monday Marvelous: Part 2


I am a little late today but better late than never. I am giving ya another "Make Monday Marvelous" post- because Monday's are, just, hard. Anyway, here is a workout to help you work off what you ate over the weekend and a mocktail to make Monday a little fancier.

Mile and Tabata
Run 1 Mile on the treadmill
After the mile to a series of tabatas*
Repeat 4 times

*Tabatas are going 20 seconds hard and resting 10 seconds- do this eight times)
(Sometimes I can only do the tabata 3 times... I am only human. Haha)

Mint to Be
You know by now that I don't do measurements when it comes to mocktails. Ha.
But here is one that my mom and I are obsessed with!
 You'll need:

Club Soda (Use Sprite if you want it sweeter)
Apple Juice
Lime
Mint Leaves

Put the ice and mint in first.
Add about a cup of Apple Juice and another cup of Club Soda.
Squeeze the lime in and you are good to go!

Guest Post: A Southern Birthday Party

I don't know why but I am just in awe of the South. Its charm, character, fashion, fried food and accents! Plus the hanging moss and the friendliness of the people... anyway I just find it charming. There is a blogger I follow who is a real life Georgia Peach, her name is Rachel and writes Feel Good Time. She is an artist and a fantastic party thrower! ANYWAY,  I asked her to do a post on how to host good ole' southern party! I hope you love it as much as I do! Have a good weekend and thanks Miss. Rachel!

Growing up and being raised in the south has planted some very strong southern roots and it boils deep in my veins. I find myself homesick quite often as my whole entire family is home in the south and so when my birthday rolls around I tend to miss them and some of our southern traditions as well as the May thunderstorms that roll in through the night.

With that said, last year for my birthday in May I wanted to bring home to where I was currently living which was in Utah, as I was still in school. I decided to do what we southerners love best - to host. And that I did. I hosted my own southern birthday dinner with some dear friends and I treated them to some of my favorite southern fixins such as jalapeno cheese grits, fried cajun pickles with remoulade sauce and my families favorite - Minnie's Chocolate Pie.

It was more work than I imagined, to say the least and I had many more items on my menu I wanted to whip up but time got the best of me.

As for the decor, I was planning on having the party dine outside in our backyard but lucky for me a thunderstorm rolled in, just as if I were home and I was just as pleased to move the party inside. I hung bistro lights above the dining room table and bought cheap table cover, plates & utensils from a party store (zurchers) and to make the utensils a little more interesting, I spray painted the bottom half gold. The center piece of the table was filled with San Pellegrino bottles filled with flowers. I wanted my guests to know what they would be eating that night so I simply wrote up a menu on the computer and printed it out placing it on each plate. My favorite detail to the party was the "Gone With the Wind" table place cards showing a southern silhouette. To set the southern mood with the perfect thunderstorm, I lit candlesticks and filled the background noise with music I grew up listening too, Georgias finest, Ray Charles & Otis Redding along with a selection of Blue Grass music.

It was the perfect night spending my birthday and filling a little bit closer to home surrounded by close friends whom I consider family. It's not too hard to throw a dinner party with a smaller budget- truthfully the jackpot is found in the party stores. You can make something cheap seem very nice looking. (Read below the pics for recipes.)


Recipes:
Fried Cajun Pickles
(Normally you use a deep fryer, which is what I used but I understand that not everyone has one, so this recipe is for the oven on the broil setting.)

Ingredients:
1 (24 ounce) jar pickles, slices
2 eggs
1/3 cup flour
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce
1 teaspoon garlic powder
1 teaspoon cajun seasoning
1 teaspoon pepper
1 1/2 cups panko breadcrumbs

DIRECTIONS:
1. Turn oven broiler on high.
2. In a medium bowl, whisk together eggs and flour.
3. Add Worcestershire sauce, hot sauce, garlic powder, Cajun seasoning, and pepper. Mix well.
4. Place panko bread crumbs in a shallow dish.
5.Dunk each pickle slice into the egg mixture, than dredge it in the panko bread crumbs.
6. Place coated pickles on a rack set above a baking sheet and sprayed with non-stick cooking spray.
7.Place pan in the middle rack of the oven. Broil for about 3 minutes on each side.

JALAPENO CHEESE GRITS with BBQ CHICKEN

INGREDIENTS:
The Chicken:
Boneless Chicken Breasts, 1.5 to 2 pounds
Bacon, 6 to 8  strips
Thyme Sprigs, 3 or 4 (or a teaspoon or two of dried thyme)
Bay Leaves, 2
Chicken  Bouillon or Stock, 1 1/2 cups
Worcestershire Sauce, 1/4 cup or so
BBQ Sauce, 1/2 cup or more
The Grits:

Stone Ground Grits (no instant allowed!), 1 1/2 cups
Chicken Bouillon or Stock, 7 cups
Jalapeno Peppers, 2 or 3
Cheddar Cheese, 1  1/2 cups, grated
Butter, 2 tablespoons
Half and Half, 1/3 cup or so
Rinse and halve the peppers and put them on a baking sheet, cut side down.  I left a few seeds but it’s your call.  Put them under the broiler for just a few minutes, until the skin starts to blacken.  Take them out and let them sit until they’re cool enough to handle.

Meanwhile, cut the chicken into chunks.

Scissors, an easy way to dice bacon.

In a large skillet, cook  up the bacon over medium heat to medium-high heat, until it starts to get nice and brown.  Ignore that stray piece of chicken that fell into the pan.

Add the chicken to the pan. The bacon grease will provide  just enough fat for browning.  Add the bay leaves and thyme.  Cook, stirring every now and then, until the chicken is browned. This is also a good time to get the stock started for the grits.

Add the bouillon and let it come to a nice, low simmer.  Cook, uncovered, until the chicken is cooked through, about 15 to 20 minutes.

While the chicken is doing it’s own thing, it’s time to cook the grits. Once the stock is boiling, slowly whisk in the grits. Reduce the heat to medium-low and continue to whisk  until it’s lump-free.   Reduce the heat even more and let them cook for another ten minutes or so, stirring occasionally.  Remove the charred skin from the roasted peppers and mince them.

By the time the chicken is done, the broth will be reduced quite a bit. Remove the spent thyme and bay leaves then stir in the Worcestershire sauce.

Add your favorite BBQ sauce, enough to lightly coat the chicken.  Stir it all together and cook for just another minute or two.

Remove from heat, dump it all into a serving dish and set it aside for now as we finish up the grits.

Remove the grits from the heat and stir in the cheese, butter and peppers.

Add a little milk or half and half and stir it all together until it’s smooth.

Pile the chicken onto a big mound of grits and enjoy!

MINNIE'S CHOCOLATE PIE: 
INGREDIENTS
1 packaged pie dough crust (or you can make your own)
1 1/2 cups sugar
3 tablespoons unsweetened cocoa powder
4 tablespoons unsalted butter, melted
2 large eggs, beaten
3/4 cup evaporated milk
1 teaspoon pure vanilla extract
1/4 teaspoon salt
whipped cream, for serving

DIRECTIONS
Preheat the oven to 350 degrees. Ease the pie crust into a 9-inch pie plate and crimp the edges decoratively. Prick the crust lightly with a fork. Line the crust with foil or parchment paper and fill with pie weights or dried beans. Bake for 15 minutes or until set. Remove the foil and weights and bake for about 5 minutes longer, just until the crust is dry but not browned.

Meanwhile, in a bowl, whisk the sugar with the cocoa powder, butter, eggs, evaporated milk, vanilla and salt until smooth.

Pour the filling into the pie shell and bake for about 45 minutes, until the filling is set around the edges but a little jiggly in the center. Cover the crust with strips of foil halfway though the baking {to prevent the crust brown browning too much}. Transfer the pie to a rack and let cool completely before cutting into wedges. Serve with whipped cream

The chocolate pie can be refrigerated over night.

A Monday Mocktail

My dear sweet readers! I am only a couple of weeks in and a pulled a big old newbie blogger no-no, I was absent all last week! I have a good excuse though! I was guest hosting on a TV show! Yay! I finally got to be back on a lifestyle show! The show is called Good Things Utah. One of the regular hosts is in Australia so I got a chance to fill in for him for a bit. It was a bah-LAST especially since I interned for them years ago. Anyways! If you want to check out some of my clips there are some links down there for ya.

Moving on, because I am pretty sure you are reading this for the title and not my absence excuse, I have a way yummy mocktail recipe for you. Plus, it's fun to make them on Monday's to make the start of the week not so drab and bleh.

Sunrise Mocktail
Yeah, so before I move on... when it comes to measurements for these things I am TERRIBLE.
So... most all of this is "to taste." Ha.

You will need:
*Cherry Grenadine
*Orange juice
*Grapefruit Juice
*Gingerale

Drizzle the bottom of the glass with a couple of tablespoons of grenadine. Add about 1/2 a cup of orange juice, then grapefruit juice and finish it off with some fizz from the Gingerale. Drink up!

Joes' Cake

My dad and brother are OBSESSED with this cake. Anytime my little brother wants to celebrate something this cake is part of it. It is a recipe from my Grandma and has been in my family for some time...so I hope ya'll enjoy it!

Joe's Cake
1/2 Cup Cocoa
1 1/2 Tsps. Soda
1/2 Cup boiling water

Put the above ingredients in a bowl and stir until they are well blended. Set aside to add after last addition of flour. Meanwhile---

Beat until well blended:
1 Cup shortening
1 3/4 Cups Sugar
1/4 tsp. Salt

Add: 2 eggs beating well after each addition...
Add: 1 3/4 cups think buttermilk
Add: 2 1/3 cups all purpose flour
Add: 2 tsp. vanilla

Beat all together until smooooooth. If the batter is too thick add a little more buttermilk. Lastly add the Cocoa mixture and blend together. Bake at 350 for 45-50 minutes. 

Frosting:

Blend together:
1 Pkg powdered sugar
2 Tlbsp. Cocoa
4 Tlbsp. Butter
2 Tsp. Vanilla
Add enough milk to blend ingredients so the frosting becomes a good consistancy to spread on cake.

Side note: My dad is convinced that the cake tastes better after you leave it out over night. I don't know why, but he is SURE of it.

A Little Bit of Marvelous On A Monday

You can see I am struggling today but the fact that this post is going up at noon. I went to bed late and, feeling sick, took some cold medicine. This resulted in me sleeping in a wee bit too long. When I finally woke I up I though, "Gah. It's Monday again." So I decided to do a post on things you can do on Monday to make it not so mehhhhhhh.


Monday Mocktails!
I don't drink, so I am always down for a good ole' Mocktail! The recipe I am going to give you is SO easy and I have been drinking it since I was small.

Ingredients:
Apple Juice
Gingerale
Lime

Basically mix the Apple Juice and Gingerale together. I don't have exact measurements because it totally depends on taste. Cut the lime in half and squeeze into the drink! Then, voila, the easiest Mocktail ever! (If you sip it through a cute straw it tastes better)


Work your Muscles on Monday
 For some reason if I work out on Monday it sets a precedent for the rest of the week (Sometimes it doesn't... I am only human.) So here is a workout I created to make me feel like I am tougher than Monday's.

Running, lifting, abing, and Elipticalling 
(Like my made up words?)

Run a mile
50 Bicep curls
Elliptical for 10 min
50 FULL RANGE Sit ups

Repeat 3x's
(If you are a cardio wiz... run farther/faster.)

Movie Monday's!
I have discovered that some movie theaters cut prices of movies on Monday's. What better way to start your week than having a little bit of fun? So I suggest checking out the theaters near you and seeing if they have special Monday deals! It will make this drab day not as bad.

A Tea Party and Scones

To start off I need to say... I by no means call myself a baker and/or a cook. However, when I find something that is super easy and even IIIIIII can do it I have to share.  So here is a recipe for Cranberry/Orange Chocolate Scones, Cheese Scones and Clotted Cream. I got the recipe from a book called "Simply Scones" but I have changed the recipe a bit for my liking. Also, I have a couple of ideas for ya if you want to get all fancy and have a tea-party. (Pinky's up! Oh boy that was cheesy...)

PARTY TIME!
Tea Sets:  I have had my tea-set for a while. Tea-cups and tea-pots are the cutest things to me. My mom has collected them since I was little and it's just part of my childhood and I love it. If you don't have any, thrift stores are a great option.

Napkins: I got this idea from a friend. Go to a thrift store and by some girly-looking napkins/hankies. When they are miss-matched it makes them twice as cute. Put a favor in them and tie the hankie with a bow. Perfect souvenir.

Tea: In my family we drink herbal teas. I suggest if you have kids coming over make it something fruity, they will like the sweeter flavors. My mom loves Chamomile for its soothing taste, I like citrus flavors. You kind of have to know your audience... as with any party you plan!

Additional Ideas: I thought it would be cute to get those crystal-sugar sticks to use as stirrers. Most Americans like sugar in their tea so these help sweeten the tea and adds a little decor. (I would just like to say I am British by blood and I prefer milk in my tea. Just had to throw that out there.)













Cranberry/Orange Chocolate Scones
Ingredients: 
1/2 Cup Dried Cranberries
1/2 Cup semi-sweet chocolate chips 
(Please note you may indeed use as much chocolate as necessary .. add more if you are going through heart break and/or just watched some sort of "Best Chocolate" show on the Food Network.)
1/4 Cups Granulated Sugar
2 Cups Flour
2 Tsp. Baking Powder
1/2 Tsp. Salt
1/2 Cup Unsalted Butter (Chilled)
2 Eggs
2 Tablespoons Orange Juice
1 Tsp Vanilla Extract
1/2 Tsp. Orange Peel

1 tsp vanilla extract, a couple tablespoons of powder sugar and orange juice (to taste) for optional glaze

Directions:
-Preheat oven to 400 Degrees 
-In a large bowl stir together flour, sugar, baking powder and salt. Cut the butter into small cubes and add them in. 
-(For this next part I would NOT suggest a blender... it can move too fast and mess things up.) Use a pastry cutter or two knives and mix the mixture till it has coarse crumbs
-In another bowl add the eggs, juice (I just used juice from the orange I was going to peel), vanilla and orange peel
-Add the wet and dry ingredients and mix (It's gonna be sticky!)
-Add in chocolate and cranberries
-Pat the dough into a 9-inch circle on parchment paper to put on baking sheet 
-Cut into 8 wedges and bake 20-25 minutes

-The optional glaze is super easy, add the vanilla, powdered sugar and orange mix until it becomes a glaze like consistency and place on top of the scones when they are out of the oven 

*For Clotted Cream... by some cream and the grocery store and beat that cream up! Be careful though, don't be it too hard because it will turn into butter.*

Cheeeeeese Scones
Ingredients:
2 Cups Flour
2 Tsp. Baking Powder
1/4 Tsp Salt
Dash of Black Pepper
1 1/2 Cups of cubed Sharp White Cheddar Cheese (You don't have to use white I just like it.)
3 Tbsp. Grated Parm. Cheese
1/3 Cup Unsalted Butter, chilled
1/3 Cup Milk
2 Eggs
Optional Glaze: 1 Egg yolk, mixed with 1 tsp of water

Directions: 
-Preheat oven to 400 Degrees 
-In a bowl mix flour, baking powder, salt, black pepper and Parm Cheese
-Cut butter into small cubes and toss it into the mixture and mix until it resembles coarse crumbs
-In another bowl mix milk and eggs
-Add the wet mixture to the dry mixture together- stir and then add the cubed Cheddar
-Knead the dough and spread into a 8 inch diameter. Cut into 8 wedges and cook for 15-17 minutes 

-If you want too, only if you want, you can mix the Egg Yolk and water together and spread it across the scones before they hit the oven. This will make them look all nice and golden brown when they come out of the oven!


To finish off, I would like to say it is a huge debate in England if the Clotted Cream or Jam comes first. Whatever your preference... let's keep it cordial. Happy Tea Time!
