Hey guys! Happy weekeeeeend! I hope your weekend is wonderful, fun and relaxing all at the same time.

Moving on, let's talk Super Bowl Sunday! More specifically lets talk about my favorite food on Super Bowl Sunday. Every year my mom makes this delllllicious popcorn. I know what your thinking... what is so special about popcorn? Well let me tell you, when it's mixed with peanuts, marshmallows and covered with white chocolate and then drizzled with dark chocolate it becomes pretty darn special. BUT this year my mom and I decided to have a little fun with the colors of the popcorn. Since it's the Patriots vs. Seahawks we decided instead of drizzling dark chocolate (you can still do that if you want) we'd cover the popcorn in each teams colors! It made the popcorn a little more festive and, obviously, more colorful. Another plus? This is the easiest recipe ever! Try it out and let me know what you think!

White Chocolate Popcorn:

Ingredients:
-2 bags of popcorn
-1 bag of white chocolate
-1 cup of peanuts (You can add more if you want.)
-1 cup of marshmallows (You can add more of these if you want as well!)
-1 Bag of red, blue and green chocolate (You can find the colored chips at a craft store.)

Making the Popcorn:
-Pop the popcorn
-Place it in a big bowl
-Mix peanuts and marshmallows in with the popcorn
-Melt the white chocolate (We put the chocolate in the microwave in 30 second increments, stirring every time the beeper went off until the chocolate was nice and smooth.)
-Mix the white chocolate in with the popcorn
-Place the popcorn on a baking sheet so it can dry
-Melt the red, blue and green chocolate the same way you did the white
-When its nice and smooth take a spoon and drizzle it over the popcorn
-Let the popcorn sit so the chocolate hardens theeeen eat up!

DIY Last Minute Christmas Decor




I am pretty sure most of you reading this are all set on the Christmas Decorations front. BUT if you're not, or by chance you are throwing  party and you want to spruce things up a bit I have some super easy DIY Decorating ideas for ya. Let's do this!

Golden Pine-cones:
This is seriously these easiest project ever, I almost feel silly sharing it because I am sure many of you have tried it. Anyway, to add a little glam to your house pick up some pinecones and spray paint them gold. I think it is super pretty and so easy to do!

Jars and Pretty Things:
I wanted to put the pine-cones in a pretty holder, I mean they deserved it! So I went to All a Dollar and found some jars. I went home and painted the top of them gold (When I first started painted it look so silly! It needs a few coats so don't freak out if it doesn't look good right away!) While I was there I found some cheap Christmas Balls. I put them in some clear jars I already had at home and spread the extra balls through out our house.

Frames:
Can you tell I am a fan of gold?! Well guess what, I am also a fan of All a Dollar. Every once in a while they have some gems- like some of these frames! (I will be honest and say a lot of the frames my mom has had for years, BUT there are a few we bought for a buck!) If you can't find gold, grab one and spray paint it gold. YAY spray paint! Ok moving on, inside the frames I place some vintage Christmas cards (not pictured) little baubles people use to put on presents and cute Christmas lyrics. I think its adorable... but then again I made it...

Garland:
Here is a tip, fresh garland makes any mantel, table or serving area look awesome. I went to Smith's Marketplace- yes Smith's- to get this garland. Buying it fresh makes your house smell like Christmas, plus it looks pretty!

Guest Post: A Southern Birthday Party

I don't know why but I am just in awe of the South. Its charm, character, fashion, fried food and accents! Plus the hanging moss and the friendliness of the people... anyway I just find it charming. There is a blogger I follow who is a real life Georgia Peach, her name is Rachel and writes Feel Good Time. She is an artist and a fantastic party thrower! ANYWAY,  I asked her to do a post on how to host good ole' southern party! I hope you love it as much as I do! Have a good weekend and thanks Miss. Rachel!

Growing up and being raised in the south has planted some very strong southern roots and it boils deep in my veins. I find myself homesick quite often as my whole entire family is home in the south and so when my birthday rolls around I tend to miss them and some of our southern traditions as well as the May thunderstorms that roll in through the night.

With that said, last year for my birthday in May I wanted to bring home to where I was currently living which was in Utah, as I was still in school. I decided to do what we southerners love best - to host. And that I did. I hosted my own southern birthday dinner with some dear friends and I treated them to some of my favorite southern fixins such as jalapeno cheese grits, fried cajun pickles with remoulade sauce and my families favorite - Minnie's Chocolate Pie.

It was more work than I imagined, to say the least and I had many more items on my menu I wanted to whip up but time got the best of me.

As for the decor, I was planning on having the party dine outside in our backyard but lucky for me a thunderstorm rolled in, just as if I were home and I was just as pleased to move the party inside. I hung bistro lights above the dining room table and bought cheap table cover, plates & utensils from a party store (zurchers) and to make the utensils a little more interesting, I spray painted the bottom half gold. The center piece of the table was filled with San Pellegrino bottles filled with flowers. I wanted my guests to know what they would be eating that night so I simply wrote up a menu on the computer and printed it out placing it on each plate. My favorite detail to the party was the "Gone With the Wind" table place cards showing a southern silhouette. To set the southern mood with the perfect thunderstorm, I lit candlesticks and filled the background noise with music I grew up listening too, Georgias finest, Ray Charles & Otis Redding along with a selection of Blue Grass music.

It was the perfect night spending my birthday and filling a little bit closer to home surrounded by close friends whom I consider family. It's not too hard to throw a dinner party with a smaller budget- truthfully the jackpot is found in the party stores. You can make something cheap seem very nice looking. (Read below the pics for recipes.)


Recipes:
Fried Cajun Pickles
(Normally you use a deep fryer, which is what I used but I understand that not everyone has one, so this recipe is for the oven on the broil setting.)

Ingredients:
1 (24 ounce) jar pickles, slices
2 eggs
1/3 cup flour
1 tablespoon Worcestershire sauce
1 teaspoon hot sauce
1 teaspoon garlic powder
1 teaspoon cajun seasoning
1 teaspoon pepper
1 1/2 cups panko breadcrumbs

DIRECTIONS:
1. Turn oven broiler on high.
2. In a medium bowl, whisk together eggs and flour.
3. Add Worcestershire sauce, hot sauce, garlic powder, Cajun seasoning, and pepper. Mix well.
4. Place panko bread crumbs in a shallow dish.
5.Dunk each pickle slice into the egg mixture, than dredge it in the panko bread crumbs.
6. Place coated pickles on a rack set above a baking sheet and sprayed with non-stick cooking spray.
7.Place pan in the middle rack of the oven. Broil for about 3 minutes on each side.

JALAPENO CHEESE GRITS with BBQ CHICKEN

INGREDIENTS:
The Chicken:
Boneless Chicken Breasts, 1.5 to 2 pounds
Bacon, 6 to 8  strips
Thyme Sprigs, 3 or 4 (or a teaspoon or two of dried thyme)
Bay Leaves, 2
Chicken  Bouillon or Stock, 1 1/2 cups
Worcestershire Sauce, 1/4 cup or so
BBQ Sauce, 1/2 cup or more
The Grits:

Stone Ground Grits (no instant allowed!), 1 1/2 cups
Chicken Bouillon or Stock, 7 cups
Jalapeno Peppers, 2 or 3
Cheddar Cheese, 1  1/2 cups, grated
Butter, 2 tablespoons
Half and Half, 1/3 cup or so
Rinse and halve the peppers and put them on a baking sheet, cut side down.  I left a few seeds but it’s your call.  Put them under the broiler for just a few minutes, until the skin starts to blacken.  Take them out and let them sit until they’re cool enough to handle.

Meanwhile, cut the chicken into chunks.

Scissors, an easy way to dice bacon.

In a large skillet, cook  up the bacon over medium heat to medium-high heat, until it starts to get nice and brown.  Ignore that stray piece of chicken that fell into the pan.

Add the chicken to the pan. The bacon grease will provide  just enough fat for browning.  Add the bay leaves and thyme.  Cook, stirring every now and then, until the chicken is browned. This is also a good time to get the stock started for the grits.

Add the bouillon and let it come to a nice, low simmer.  Cook, uncovered, until the chicken is cooked through, about 15 to 20 minutes.

While the chicken is doing it’s own thing, it’s time to cook the grits. Once the stock is boiling, slowly whisk in the grits. Reduce the heat to medium-low and continue to whisk  until it’s lump-free.   Reduce the heat even more and let them cook for another ten minutes or so, stirring occasionally.  Remove the charred skin from the roasted peppers and mince them.

By the time the chicken is done, the broth will be reduced quite a bit. Remove the spent thyme and bay leaves then stir in the Worcestershire sauce.

Add your favorite BBQ sauce, enough to lightly coat the chicken.  Stir it all together and cook for just another minute or two.

Remove from heat, dump it all into a serving dish and set it aside for now as we finish up the grits.

Remove the grits from the heat and stir in the cheese, butter and peppers.

Add a little milk or half and half and stir it all together until it’s smooth.

Pile the chicken onto a big mound of grits and enjoy!

MINNIE'S CHOCOLATE PIE: 
INGREDIENTS
1 packaged pie dough crust (or you can make your own)
1 1/2 cups sugar
3 tablespoons unsweetened cocoa powder
4 tablespoons unsalted butter, melted
2 large eggs, beaten
3/4 cup evaporated milk
1 teaspoon pure vanilla extract
1/4 teaspoon salt
whipped cream, for serving

DIRECTIONS
Preheat the oven to 350 degrees. Ease the pie crust into a 9-inch pie plate and crimp the edges decoratively. Prick the crust lightly with a fork. Line the crust with foil or parchment paper and fill with pie weights or dried beans. Bake for 15 minutes or until set. Remove the foil and weights and bake for about 5 minutes longer, just until the crust is dry but not browned.

Meanwhile, in a bowl, whisk the sugar with the cocoa powder, butter, eggs, evaporated milk, vanilla and salt until smooth.

Pour the filling into the pie shell and bake for about 45 minutes, until the filling is set around the edges but a little jiggly in the center. Cover the crust with strips of foil halfway though the baking {to prevent the crust brown browning too much}. Transfer the pie to a rack and let cool completely before cutting into wedges. Serve with whipped cream

The chocolate pie can be refrigerated over night.

A Tea Party and Scones

To start off I need to say... I by no means call myself a baker and/or a cook. However, when I find something that is super easy and even IIIIIII can do it I have to share.  So here is a recipe for Cranberry/Orange Chocolate Scones, Cheese Scones and Clotted Cream. I got the recipe from a book called "Simply Scones" but I have changed the recipe a bit for my liking. Also, I have a couple of ideas for ya if you want to get all fancy and have a tea-party. (Pinky's up! Oh boy that was cheesy...)

PARTY TIME!
Tea Sets:  I have had my tea-set for a while. Tea-cups and tea-pots are the cutest things to me. My mom has collected them since I was little and it's just part of my childhood and I love it. If you don't have any, thrift stores are a great option.

Napkins: I got this idea from a friend. Go to a thrift store and by some girly-looking napkins/hankies. When they are miss-matched it makes them twice as cute. Put a favor in them and tie the hankie with a bow. Perfect souvenir.

Tea: In my family we drink herbal teas. I suggest if you have kids coming over make it something fruity, they will like the sweeter flavors. My mom loves Chamomile for its soothing taste, I like citrus flavors. You kind of have to know your audience... as with any party you plan!

Additional Ideas: I thought it would be cute to get those crystal-sugar sticks to use as stirrers. Most Americans like sugar in their tea so these help sweeten the tea and adds a little decor. (I would just like to say I am British by blood and I prefer milk in my tea. Just had to throw that out there.)













Cranberry/Orange Chocolate Scones
Ingredients: 
1/2 Cup Dried Cranberries
1/2 Cup semi-sweet chocolate chips 
(Please note you may indeed use as much chocolate as necessary .. add more if you are going through heart break and/or just watched some sort of "Best Chocolate" show on the Food Network.)
1/4 Cups Granulated Sugar
2 Cups Flour
2 Tsp. Baking Powder
1/2 Tsp. Salt
1/2 Cup Unsalted Butter (Chilled)
2 Eggs
2 Tablespoons Orange Juice
1 Tsp Vanilla Extract
1/2 Tsp. Orange Peel

1 tsp vanilla extract, a couple tablespoons of powder sugar and orange juice (to taste) for optional glaze

Directions:
-Preheat oven to 400 Degrees 
-In a large bowl stir together flour, sugar, baking powder and salt. Cut the butter into small cubes and add them in. 
-(For this next part I would NOT suggest a blender... it can move too fast and mess things up.) Use a pastry cutter or two knives and mix the mixture till it has coarse crumbs
-In another bowl add the eggs, juice (I just used juice from the orange I was going to peel), vanilla and orange peel
-Add the wet and dry ingredients and mix (It's gonna be sticky!)
-Add in chocolate and cranberries
-Pat the dough into a 9-inch circle on parchment paper to put on baking sheet 
-Cut into 8 wedges and bake 20-25 minutes

-The optional glaze is super easy, add the vanilla, powdered sugar and orange mix until it becomes a glaze like consistency and place on top of the scones when they are out of the oven 

*For Clotted Cream... by some cream and the grocery store and beat that cream up! Be careful though, don't be it too hard because it will turn into butter.*

Cheeeeeese Scones
Ingredients:
2 Cups Flour
2 Tsp. Baking Powder
1/4 Tsp Salt
Dash of Black Pepper
1 1/2 Cups of cubed Sharp White Cheddar Cheese (You don't have to use white I just like it.)
3 Tbsp. Grated Parm. Cheese
1/3 Cup Unsalted Butter, chilled
1/3 Cup Milk
2 Eggs
Optional Glaze: 1 Egg yolk, mixed with 1 tsp of water

Directions: 
-Preheat oven to 400 Degrees 
-In a bowl mix flour, baking powder, salt, black pepper and Parm Cheese
-Cut butter into small cubes and toss it into the mixture and mix until it resembles coarse crumbs
-In another bowl mix milk and eggs
-Add the wet mixture to the dry mixture together- stir and then add the cubed Cheddar
-Knead the dough and spread into a 8 inch diameter. Cut into 8 wedges and cook for 15-17 minutes 

-If you want too, only if you want, you can mix the Egg Yolk and water together and spread it across the scones before they hit the oven. This will make them look all nice and golden brown when they come out of the oven!


To finish off, I would like to say it is a huge debate in England if the Clotted Cream or Jam comes first. Whatever your preference... let's keep it cordial. Happy Tea Time!
